Preheat the oven to 180 °C with fan.

Drain the potatoes, add the milk and mash with a potato masher until it forms a puree. Then add butter, salt and pepper and continue to grind until it is smoothened. Reserve it.

In a pan heat 3 tablespoons of oil over medium heat, and fry the onion for 10 minutes, until it becomes transparent. Add the carrots and sauté for 5 more minutes, Stir it often.
